Robert Milne grows Overture barley on the Ballymorgan farm in County Wexford, using loamy soils derived from slate and granite. Some of that barley has been malted and then used to make this Waterford whisky. Fermented for 120 hours and slowly distilled, the character of the barley is at the forefront of Waterford's process. The spirit is then matured in a combination of American and French oak.
