Distilled in 1991 at the Cooley Distillery and bottled in 2013, this limited-edition expression was matured for 20 years in ex-bourbon barrels before receiving a unique 12-month finish in Sauternes wine casks—marking the first time this French dessert wine cask finish was used for an Irish whiskey. Bottled at 46% ABV without chill filtration, it showcases a rich and complex profile with notes of apricot, white chocolate, honey, and subtle spice. Only 5,000 bottles were released, and it has since become a collector’s item, earning multiple international awards for its innovation and quality.
